The Best Roti In St Lucia

So yesterday was a really lazy day down here in Paradise St Lucia. After a mid-morning meeting I met up with some vacationing friends who I had promised to take out to lunch.

The service was a wee bit slow as the chef had been called away to some emergency at his daughter’s school, however we were told that it was nothing life threatening and that even with the chef gone our lunch too would be nothing life threatening either…

In fact the hostess was most gracious and epitomized customer service at its quintessential best. Well while we waited for lunch the rains came down and being right at the ocean’s edge it was just mesmerizing watching the raindrops blasting the ocean like tiny fire crackers while a nearby speedboat kept racing back and forth with a water skier who I was tempted to call the splash test dummy as he just couldn’t seem to get the hang of the skiing thing.

While at lunch one of my friends said that he really fancied a roti for dinner so I called up my friend Ruth form the Trinidad Dominican Embassy in Gros Islet – Yes it’s the gospel truth that this is what Ruth’s bar is called. But enough about that name for now as Ruth makes what I can only describe as the Best Made Roti in St Lucia.

Well the rains kept coming down well into the evening and Nigel, my friend from lunch decided that it was too wet to venture out but by then I already had the roti bug so off to Ruth’s I went.

Now it’s been quite a while since I visited Ruth and last night her roti seemed more flavourful than I ever remembered it - must be something about absence making the heart grow fonder.

As I sank my teeth into the roti for my very first bite and that curry touched my lips I was reminded once again that Ruth from the Trinidad Dominican Embassy Bar has got to be the best roti maker in all of St Lucia.
